Imo look in shops
try find something with claris or sora, rim brakes, and a carbon fork, like pic rel, and paint you like.
bonuses would be, under $1000, in-series external bearing crank (unlike pic rel), in-series brakes (ie shimano not tektro) and nice wheel/ tire spec.
It's doable for ~$1000. A nice one will be better than something fancy from 15 years ago.
