To park a touring bike, strap your front wheel to your downtube. That way it won't fall over and it's easy to handle.
Maybe get a shop to true your rear wheel before you go. That's by far the thing most likely to break esp with all rear loading. Try and get some weight up front. You could strap some stuff to your bars.
Make sure you have a head torch, or a flashlight that can clip to the brim of a hat. If you're camping take a nice candle to be comfy at night when you can't have a fire.
