The software exposure in undergrad and even grad school will vary a lot. Some of my coworkers were not exposed at all to them just like me. It's going to be pretty rare a school wants to pay for Aimsun licenses for example to teach you. I would say in the event you don't get exposed, just go into the job ready to work hard to learn them. Some of the modelling is basically like a video game so if you can nerd out at calibrating your models or you enjoy programming, learning them will be very easy. Also note that modelling can be extremely tedious and frustrating at times, so if you really want to go that path, be prepared for some pain.
Take a look at vid related and see if it looks interesting to you. It's a small model I built in Vissim of two adjacent intersections not too far from where I work. It wasn't project related, just something I did in my free time to learn the software.
