Cantilever lose power as the pads move inward. Therefore, pads need to be set up extremely close to rims. These brakes have terrible modulation.
V-brakes, still need to be set close to the rim but not as close and have more linearity in their modulation. Increased modulation was a major selling point.
Disc brakes (hyrdro) have perfect modulation and other advantages but move the breaking surface closer to the hub giving them less leverage over the wheel.
