Also yeah, as others mentioned, aero. With a high saddle and low handlebars you can get into an aero position - instead of sitting upright, your body is sort of positioned like a dart. This is why drop handlebars exist as well. Get the front of your body (head, shoulders, arms) as low as possible so your torso is like a dart, piercing through the air. If you sit upright then your torso is like a brick wall, aerodynamically. Which slows you down.
And actually I think aero bars (pic related) are more aerodynamic than drop handlebars so maybe I shouldn't be going on about drop handlebars being aero. Drops are probably still more aero than positioning your hands on the tops of the bars, though, I'm sure.
