I bought a lightly-used Selle Anatomica saddle from a friend, and had a similar--epiphany, I guess. A leather saddle already gives you a kind of "ass hammock" effect, but having the cutout gets you one hammock per-cheek (the movment & sag of each side is independent).
Check out this clip. There used to be a better "butt cam" video on Youtube, but I can't find it. Basically the same thing as this clip, but longer--just gave a better sense of how the leather flexes.
Cons? When it's wet out, you'll catch wheel spray in an inconvenient place. And the cutout leather will wear out/stretch out faster than the non-cut version. I got eight years hard riding out of my first one. That's just decent care, not babying it.
