50/40/30 road triples just aren't wide enough compared to compacts and subcompacts to be worth using.

Most road triple cranks have 74bcd spiders on the inside and can simply be fit with much lower grannies. Some Shimano road triples have a wierd 94 bcd granny which is worth avoiding.
Either that, or you want a mtb triple, 48/38/28 and then fit a 22t-26t granny. The deore or XT one.
Either way, with a touring triple, you fit a friction shifter, and then a lot of stuff will work.
You could also fit a mtb rear derailer, and an 11-42 cassette and just keep your crank and keep your STI shifting. Any 8 or 9 speed mtb mech will work (you want one with a barrell adjuster though), and you don't necesserily need one that is rated for that spread, many older ones designed for 36t cogs will do it.
Or, a subcompact. 46-30 or 44-28, and a cx70 front derailer, or similiar. Then you can keep your STI shifters.
