On a bike that is light that you lift to take places, being lighter matters a lot
and on a bike you have to mash to get going and get up hills, being stiff matters a lot
and on a bike where half the appeal is aesthetics and minimalism, fancy shit that looks cool matters a lot
and on a bike where it's bombproof and you want it to just werk, max reliability and service life matters a lot.
A LOT of 'cheap' components function practically as well as their boutique or higher end equivelants. The real issue with cheap shitters and low end bikes is not that they're bad but that they aren't working as well as they theoretically should, like, a well tuned low end bike is perfectly good, however many of them are not well tuned even from new. Cheap wheels that are straight with well adjusted hubs with grease in them are basically as good as any thing else. Same for cheap bars and stems. Brake pads and tires are maybe worth paying a premium on but even then i don't think you -need- to
many high end fixie builds are revolting.
