It's more likely to break down, there's more stress on everything, especially the wheels which are the critical thing while touring
It's considerably more difficult to repair
There's less space for luggage
You cannot split up, one goes to get breakfast or something, other watches all the gear, no
Something goes wrong, one person rides to get help, no (you can ride a tandem with one but it sucks)
It's not cheaper, it's probably more expensive
It's considerably more difficult to park or store or bring inside anywhere
You (mostly) cannot really take it on buses/ planes/ ferries/ van
