If you didn't have easy access to different saddles to try then leather would have the advantage that its shape does slightly conform over time, so you could get away with starting with something that was a 95/100 fit and over time it would become a 100/10, but if you can get a 100/100 fit right out of the box with a lighter modern saddle that doesn't also tend to sag over time then there's no reason to go for leather IMHO. In the distant past leather saddles really were the best option available, but these days the only reason to go with leather is because they look the part on certain bikes.
