I'm in the process of doing exactly what you're doing with handlebars and stem for my Blue Bull. got some bars and an adjustable stem and a quill adapter cheap from the co-op to figure out my stack and reach. test rode until it seemed right, measured, and ordered a nice nitto technomic to match the adjustable choice. I like the bar but I ordered one a size more narrow, I think I need that but if not I'll run the one I have .
have spent a lot on everything to restomod a fairly unremarkable bike, but like you, it has sentimental value and also I had never completely stripped and rebuilt a bike (other than a bmx) before, plus I built my own wheels, which I'd never done before.
