You will not want to change them to flats/ bullhorns ever. They are as you describe also.
If you have a sexy old road bike, get a sexy old quill style quill stem. Nitto or (new) cinelli. Don't be a faggot.
23 or 25, don't go 28 they are sluggish in comparison. On old narrow rims 25 won't have an aero profile. If you're enjoying the 23 on there, stay with that. 'Comfort' is not a negative/ positive thing, and with a steel framed bike your ride will be comfortable already. I seriously recommend splashing out for 4000s IIs. If not, pro 4s or if you must be cheap, rubinos.
