And the spec charts are conservative. Just because it's currently in vogue to run wide rims doesn't mean you have to buy new wheels. In the past mtb wheels were commonly 19 or 17mm and would have 2.1" tires on them, or bigger.
Narrower rims with very wide tires, in more extreme combinations than what you're suggesting, can squirm under hard cornering, but yours will be all good. If you're sceptical, atleast try the tires you want with the wheels you have before throwing money away.
