I did Preston-Leeds-Carlisle-Preston last year and the Settle-Carlisle line is stunning, You spend a lot of time going through the Yorkshire Dales (God's Own Country) and you go past the Forest of Bowland, Lake District, and North Pennines.
I believe that you can get a Rover ticket that allows you to get on and off at any station along the line, so you can take in the beauty. I only got a few photos but they don't do it justice.
It's also the only time i've been on a Northern train that has a trolley service! The Settle & Carlisle Trust works closely with Northern with marketing and selling tickets for the route. They have a trolley run down the train around the Ribblehead Viaduct, and they had ice cream. Unfortunately, I didn't get any at the time, but I should have.
