For everything else: Get compression bags and shit like that. Then get straps. And strap everything to the bike. This gives you infinite options and you can easily strap things to toptube, downtube, seattube, handlebar, fork blades, seatstaysy saddle, seatpost ... and it'll be morenthan you can ever have bags for. So for long trips I ditched the bike specific bags.
The sacks like in picrel come in different variations:
Some waterproof, often with that valve so you can easily purge the air out. Some have all sorts of straps around the circumference and lengthwise to compress the thing, some only a rolltop. They make all sizes.
