Aircraft components are subjected to temperature change, flexing, vibrations, and other forces/stresses that weaken the metal over time, so with older aircraft the mechanic has to be mindful of this and keep a watchful eye for the symptoms of fatigue.

If you want freelance instruction (part 61) you can use whatever plane you'd like so long as it meets the requirements of the rating you are pursuing (private, instrument, commercial, multi, etc). You'll pay the operating costs of the aircraft obviously, and the instructor rate in addition.
