Ideally, it should not be something too flashy / expensive to limit the risk of it being stolen while in the stores.
I've made this selection of potential choices and I'm open to suggstion.
I live in France, so there is very limited availability of some types of bikes (vintage touring) and abundance of others (mixte bikes).
I would be more drawn towards a mixte bike, for it's availability but I don't known if the small diameter tubes would be able to sustain 10+ kg of weight on a regular basis.
