As MTB got bigger, number of gears was an idiotic selling point, "wow a bike with 27 speeds!" So it such around longer than it should have even as 36t cassettes became common
Another issue, which fits: a wide range 7 speed cassette would suck... So would an 8 or even 9 for some people. So like the other poster said, the triple allowed you to have sane gearing jumps even when you only had 7 or 8 cassette cogs
