Two things to look for:
Flare: the hooks are angled out when the bars are viewed from the front or back. This gives you a wider stance in the drops (more stable), and you're less likely to bang your wrists into the ramps when you're putting some body english on the bike (getting rad off road, etc)
Sweep: the drops are angled out when viewing the bars from the top. Kinda a more natural wrist angle that's more comfortable, and it puts you in a bit of an elbows-out posture that give you a *lot* more leverage on the bars.
Both the Cowbell and Cowchipper bars have some flare (the Cowchipper has much more), but they both have negligible sweep - similar for most "gravel" bars.
