You don't need to keep the cable stop in your stem. You can put a cable stop in your headset stack in place of one of the spacers. They're very common parts.
There are also cable stops which clamp onto quill stems.
However, you -should- keep the stop in your stem. It's a very charming aspect of your bike. Adjustable stems like the one you bought on the other hand, are hideous, and are prone to creak.
The much better way to get a more relaxed position is to swap your -bars-. You need some with a 25.4 clamp. Riser bars also allow some reach adjustment as you can tilt them back and forward some. And they look cool.
