After a day of research I've picked out the Bullitt as a best fit so far. Low centre of gravity and nicely specced out. Seems to be a solution I see others using as well.

>How often and how far do you ride? Practically daily. Mostly short trips in the city under 5km each way. I'm planning to start camping with the dog come spring/summer - only overnighters at first - and would be nice to do so with the bike.
