For regular road use, I would say something like 1x6 is already decently usable to deal with more difficult rides. For MTB-alike applications 2x7 would already do really well for someone like me, as long as front has steep ratio between gears and back is the opposite to that- monster sized casette isn't that useful in comparison to having means to do small step adjustments.
