A bike ride can be a functional form of travel, yes, but it's also about the joy of a bike ride while getting exercise in. And when that's the goal, wouldn't you rather have a nice change of scenery, winding roads, changes in elevation or road curvature to navigate and so on?
Though this seems to be North Dakota so I guess there isn't a whole lot to see anyway. As someone not from there I would probably enjoy biking it for a while, but I doubt I'd enjoy riding the same straight lines with nothing but green fields around me for too long. It does look pretty but I'd still want some minor hills or just turns in the road.
