If you really want to go hard then size down the tires to like 1.75 paselas or kojak or something slick, and get full fenders from Velo Orange or Honjo. Quality fitment on any fenders takes a lot of patience and some custom work.
To stay trail bike spec, my method is to just find any junked old plastic fender, (better, have a box of them), remove all the hardware, cut it, and drill it, and attach with zip ties, or, bolts to the rack mounts on the seat stays. You can do this front and rear. You can also do it with big plastic drink bottles.
I am not a fan of more light asssaver type on and off fenders on mtbs. Just leave it on and attach it more securely.
how well does your indexing work with a suntour shimano mix? That suntour mech is handsome. That stem is really handsome. Though, like always, as you work towards dialing in the fit, I would like to see a roller-cam stem for the cantilever brake. I would also get riser bars. Crank caps. More modern pedals. Your shift cables are too long.
