I'm somewhat the same as well , I tend to like walking around airports and finding a nice place to sit down and watch people work in the tarmac.
I try to find a bar that have window seats and enjoy a few beers watching the planes and people go by.
That being said some airports offer observation decks on the airside without actually having to go through security. One of the nicest ones I recall was Haneda Airport which was on the roof of the terminal since I had one or two hours to kill before being able to check-in.
