gravel is a marketing goldmine and over advertised as fuck ill give you that but the bikes themselves (some of them at least) at the best bikes for most people. 42mm tire clearance, racks and fenders, relaxed geometry, more durable builds and easier gears for off road hill climbing and loaded biking, and just for most people sub-compact gearing is still over geared. Yes you can ride any bike in gravel I've rode it on 23s pumped up to 130psi but that doesn't mean it was the right tool for the job. This isn't a "everyone needs to go buy a new bike just for riding on some rocks" you need to look at the bigger picture and a bike for the people is now more mainstream and available. Your miles will vary with the companies though, I laugh when I see "gravel" bikes with race geometry and can only fit a 32-35mm tire max, and no mounts on the fork or rear for racks or fenders.
