Peak power is important in ICE cars because you don't have access to it the majority of the time, and which is why small eco shitboxes where absolutely horrid to drive before turbos became common. And turbos became common because it was the only way for eco shitboxes to become reasonably responsive.
Thats also ignoring another inconvenience: A ICE engine works by injecting a combustable into a combustion chamber, which then indirectly powers the wheels. This means there is a lag between injecting and the momentum actually turning the engine, which indirectly turns the wheels.
