unless you want clothes to go out on the town in, I would drop the dickies and replace with a pair of thermal leggings, polyester or merino to wear under shorts when it's cold. Significantly lighter/more compact and warmer.
Then also maybe a pair of very thin pyjama type things for kicking back in camp in.
I'd also drop the rain trousers. You can't really cycle in them. Just get your legs wet.
You don't need the fleece and the down jacket. Pick one (the down jacket)
I'd swap both of the shirts for looser merino or polyester thermals which serve the same purpose, go longer without washing, and can be layered for warmth in bad conditions.
Don't take swimming togs. Just swim in your undies.
I also think you want an as thin as possible, non-waterproof outer wind layer like pic related. You don't want to be stuck between wearing bulky mid layers or a raincoat to stay warm on the bike. And they layer quite well with rain coats in the rain.
you also probably want one of those very thin stretchy neck warmers and thin gloves for cold days and a sunhat which is comfortable under your helmet and a beanie.
