even if you went for bar end shifters and hood brake levers, the mechanical advantage of the levers for canti's is way lower in order to reduce lock.
My advice, if you run into problems with the brakes locking too easily, is to use a longer/high angle yoke to reduce the efficiency of the brake itself.
Also Shimano RSX shifters are a very good candidate for this type of conversion if you can find them. (pic related)
