Once a dam is build, that's it, you're not gonna make it any more powerful or increase the capacity and you're certainly not going to be able to build a lot more dams, even if you have rivers near by. And if you don't have any nearby rivers? Compared to battery farms, where if you want to double the capacity, just buy more batteries. Of course this is way more expensive then hydro or just building a 50 MW natural gas power plant, which is why noone is really building large scale grid storage battery farms yet.

This is because we still use extremely low levels of renewables as compared to fossil fuels. Those fossils fuels plants that can be started up and used to make up for any fall in power output incase the wind starts to die down or if it's a cloudy day. And most of that is hydro, which doesn't have the unreliability problem of solar and wind.
