You probably already have your classes settled but if you want an easy intro into GIS, GEOG 1502 -"Mapping Our World" is an easy 3 credit mostly online class that I thought was fun. Offered Fall and Spring. Just in the fall is GEOG 3573 - "Introduction to Digital Mapping: ArcGIS Basics" which is just 2 credits and meets only 10 weeks.
