threadless is better than threaded but quill stems do just suit old steel bikes.

The thing about later classic mtbs, is you're just less likely to find a high spec bike with a rigid frame. Old suspension mtbs fill a semi-useless niche.
Practically any rigid cromo mtb is 'good' though. You think those basic groupsets totally went to shit?
