Town buildings themselves didn't have walls around them (no space), but buildings themselves were pretty tough not full castles but not something that unwelcomed guest get can get in easily. Also towns had paranoid law enforcement policies. Mandatory night curfews with streets locking down and night patrols so "Random strangers walking by" were not allowed. (but muh rights!)
Only slaves (serfs) lived in the openly located unwalled villages and this was the LAW (loicens to fortify). Building wall was privilege. So lords could pillage and punish their serfs without walls getting in teh way.
Sleeping carelessly knowing that your rest is protected by high walls was privilege. Living in shack on the open street was for slaves.
