Go zoomies? Used Challenge Fujin or Optima (low) Baron should be relatively widespread.
Touring, need to carry some shit? Most of the challenge stuff has a regular, a light and a suspension version, Nazca has (had?) a bunch of solid workhorse recumbents.
Something still in production? Of the top of my head, Bacchetta, Performer, M5, Challenge, Cruzbike, Azub, Velomo, Pelso. Some others in Europe at least.
The more aero you get, the resistenace starts being contributed by parts. A highracer with 2x27.5" or 28" wheels benefits from being able to use the best shit developed for standard upright road bikes without giving up much in terms of cda compared to the low racer.
Manlets need not apply for stick bikes. Euro style bent highracer frames are more tolerant.
