Maybe just buy a nice used steel frame on Ebay and some used or new components to match. Then build the bike to your specifications. This requires some tools and basic understanding of mechanics, for the rest there's youtube and Park Tool and Sheldon Brown and so on. And you'll be able to brag that your bike is "built not bought", which is nice.
For reference, pic related is what 400-500 € and a couple of hours of work gets you. Used frame (100 €), used wheels (had those in my parts bin but I figure you'll get similar wheels for about 100 €), everything else bought new from Ebay and
bike-discount.de (~200 €). Went crazy with the brakes (new 105 R7000 cause I'm like really fat, so you can easily save another 50 € if you take new Sora brakes or some used brakes). Except for the (obvious) lack of dealer or manufacturer warranty, I can absolutely guarantee you that this bike is both cheaper and significantly better than that piece of shit "fabricbike" you intend to buy.
