Before cycling I used to be a gym rat, then when full on roadie for 3 years. Lost all my gains on purpose.Then got tired of cycling, went back to the gym and just cycle to chill, do some cardio and clear my head.

I believe not. I think you could benefit from being able to regulate resistance and intensity. If you have a tough leg day on Day 1 and then go cycling on Day 2 on a bike without gears, you might induce more stress on your body than you would like to.
If you want to cycle on your off days and you're starting out, any bike that you can have fun on will do, but gears are probably a useful thing to have.
