The point is if you're mechanically inept making those fixes becomes mentally a big deal an a psychological hurdle, while if you have the knowledge you just do what needs done and carry on riding. This generalises to most things in life. And if you have mechanical aptitude you're more likely to keep up with basic maintenance which reduces the risk of problems during a ride.
I know well the appeal of an uncomplicated drive train, but the simple truth is that gears offer such advantages and open up the scope what kind of riding one can do so much that limiting yourself just because you're afraid of some more maintenance would be sad. And if you think a singlespeed doesn't develop problems except for flats then you need to go out and ride more.
