The issue is that at the 7 speed level, the parts are very cheap materials and badly made and often use archaic standards, like you'll get a freewheel instead of a cassette. So I don't recommend it for any performance reason, but just basic reliability.
Old 7 speed parts on the other hand are often very good because back in the day, they were the 'high tier'.
