An old touring bike would be great, better yet and old off road tourer, something like a Roberts Roughstuff, which was basically an early 90s mtb with extra eyelets and braze ons, being based on early mtb geometry means it's effectively a comfortable, tough and agile road bike at heart. Picrel is mine, all Columbus tubing, light, strong and compliant fillet brazed tubing that was designed originally as an expedition bike. This one has crossed the Kalahari, Tibet and much of the Scottish Highlands.
