Get 7/8 speed rear and triple front derailleurs i.e. claris/acera/old alivio/altus. Front will be more picky as you have top and bottom pull and different mounting methods, and will also be limited to maximum big chainring size.
Rear derailleurs will be compatible as long as they have the same capacity and maximum cog
Most 7 speed freewheels will work too (just make sure your rear derailleur can handle the biggest cog/sprocket), Shimano or sunrace, dnp epoch, Ventura, btwin, whatever. I like the finish on sunrace so I buy those (to hide the fact that I'm still on freewheel :^)
