>>1104739With the allez, a bikepacking setup would be best, not racks. So, large rigid seatbag, frame bag, handlebar roll, top tube bag, 28 tires, no fenders, and you have to be quite ruthless about what gear you bring. Due to aero and to a lesser extent weight, that style is a lot faster. It's also much better on gravel. Maybe a wider cassette and raise your bars.
With the mtb you could do the same thing, with wide knobs and no fenders, and have a bike that's really good for backcountry riding (although you won't have enough room for food/gear/water to stay there long), or you could go trad touring racks & fenders & slicks and get a lot more space for stuff.
