I got laid off for a few months in 2020, and had way too much free time on my hands, so I started riding fixed gear again. Converted an old steel road bike using a handful of parts, and I still think that's the way to go.
The hubs are DC Gran Compe II, and I've been pretty well satisfied with them. The only 'bad thing' I can say is they use cartridge bearings on a shouldered axle, so you can't swap it for something longer, 120mm is what you get.
But there is just enough threading that you can avoid altering a 126mm rear frame, and just use some small axle spacers (3/8" washers are cheap).
I've been riding this bike a lot this winter, and I'm just noticing the various rust patches :(
