You really don't need a heavily specialized bike for brevets, I rode my first on pic related just fine and I was obese in July. Swapping out the 52/42 crank to a 46/30 would be a welcome change for grades >10%, but otherwise bike is fine. I had a football sized handlebar bag for snacks and incidentals and a ziploc bag alligator clipped to the stem for the cue sheet, everything else was in my jersey pockets.

If you're off your bike your legs are resting, heavy slow tires will only make you work harder longer. That's just how I see things, Gatorskins will be fine if you want to use them.
