They go brakeless because it's less parts/cables you need to buy and they enjoy using their body to stop as opposed to using the brake pads to slow down their speed. I use back pressure with my legs in addition to front and rear bakes on my fixed gear bike and it stops just fine. Also the added risk makes it more fun. It's like how people parachute out of airplanes or go mountain biking down trails where one crash could paralyse/kill you if you hit that tree or rock the wrong way. I will add that if you're going less than 20km/h in my experience you can slow down enough with just your legs. It won't be as fast as using the brakes but it is doable. The issue with brakeless riders is they often go way faster than that and often put themselves in situations where they are forced to emergency brake frequently. Imo though to keep it short the main benefit is cost. If you don't run brakes you don't need brake levers, brake cables+housing, you also don't need brake calipers and you don't need the pads that come with them. But this comes at the cost of safety and being able to consistently brake.
