Also, maybe you have a greater tolerance for twitchiness that some other Joe. Brands like discord sell 0mm for modern bikes.
Basically my point is, while a shorter stem will usually INCREASE twitchiness (or responsiveness to speak in the affirmative), whether or not that is too much is both bike and rider specific.
Put the stem on and try it out!!! Take some pictures and post in /pybt/.
