The trouble with stem angle is, if you're stupid like me, forgetting to take into account the head tube angle. A 35° stem on a typical road bike gives 52° above horizontal. (Hence a lot of rise, and loss of reach)
Anyway I bought the 35° ergotec stem, I'll see what look I get on the bicycle... Spending too much time thinking and not enough riding.
