i setup a bike 1x7 and the drivetrain works quite well
this chainring is from a 7spd road crank.
you don't need narrow wide if you're not riding on quite rough ground. I haven't dropped the chain once. So you could just get shorter chainring bolts and take off the other chainring(s) and your fd.
basically for crosschaining you want the chainring to be in the middle of the rear cogs. On a 3x setup with a good chainline you can ride the full cassette in the middle cog anyway. So it's just like that but without the outer rings. getting it there might mean putting it on either side of the crank, or possibly spacing the crank or spacing the chainring.
your rd hanger also has to be quite straight or it won't work well.
