I have riser bars but I don't like them. They are too wide and don't offer any other hand positions.

What other handlebars can I use without changing my shifters or brakes? Clamp size is 31.8

Definitely a top consideration.

They seem a bit wide though? Anybody know of a 31.8 that sweeps back a little more?

Use a $1 adapter, or if that jars you too much get a new stem with 25.4 clamp size.

Let's say I do buy an adapter, what about my brakes and shifters? Would they fit the narrower bar?

I want a plug and play switch, just switch over the handlebar and components and call it a day.
