I average around 120 km/day on riding days, 110 if you count hiking days, off days, etc. I've heard of people who sustain 200 km/day. Most people I've talked to do something in the 60-100 km range.
Some places are full of lovely spots to stop and camp while other places don't have water sources for 100+ km. Other places have just a handful of remotely stealthy places to camp scattered between acres and acres of corn fields.

I don't know exactly which route you plans to take, but based on my experience in the area (Cornwall to Sault St Marie), I think you'll be able to camp pretty much wherever you wants, excluding the immediate vicinity of cities and you probably won't be running into many people on the way (I saw essentially no one outside of their car between Ottawa and SSM).
If you do want more of a social and less wildernessy experience, you can probably find it by staying closer to the St Lawrence. I think I would do it by way of La Tuque, at least one way.
