25km/h (15.5mph) in Europe. It's not that hard to pedal faster than that on flat ground and the extra weight isn't going to make it much slower than a non-assisted bike, but on any climbs where a non-assisted bike would be under that speed or when accelerating the e-bike will be quicker. If you only ride flat terrain and rarely stop then the difference in speed will be negligible, unless you're so weak that you can't pedal the non-assisted bike past 15.5mph, but e-bikes have the potential to be much faster on hilly terrain or in stop-start traffic.

I did not think about the advantages it can bring in stop-start traffic; I did not know, in fact, that ebikes usually have a good acceleration. Pretty much their main advantage IMO, as speed itself is nothing to worry about on a regular bike, 25-30 km/h being quite easy to reach

They do have good acceleration, as the peak wattage output is greater than what you can output unassisted. Start-stop is the main issue. You can bike a lot more defensively on one.
